Founded in 1098, the Abbaye Notre-Dame de Cîteaux is home to the founding monks of the Cistercian order. Since 1925, with patience and devotion, they have been producing an authentic monastic cheese shaped and matured at the abbey, with milk from their own herd of around sixty Montbéliarde cows.

 

In 2010, Abbaye de Cîteaux entrusted us with the implementation of air flow management and air treatment for their entire new cheese factory. Air Quality Process is proud to support Frère Benoit and his dedicated community in the manufacture and maturing of their cheeses, which have rightly won numerous awards!
